Steamed Mussels in Tomato Broth

Inspired by our favorite seafood restaurant Culls & Pistols in New York, I wanted to make one of our favorite items from their menu home. 3o minutes to a delicious dinner on a busy night? Yes, thats all you need for this easy recipe of steamed mussels in tomato broth.

Ingredients: steamed mussels in tomato broth
  • 2 lb / 1kg mussels
  • 1 small yellow onion
  • 3 cloves garlic
  • 1 cup diced fresh or canned tomatoes
  • 1 Spanish style chorizo sausage
  • 1 cup dry white wine
  • 1 spring of fresh thyme
  • 1/2 tsp smoked sweet paprika
  • extra virgin olive oil
  • salt

In a medium non aluminium size pot heat the olive oil and add thinly sliced onion, little salt and cook until soft. Stir in sliced garlic and cook for another minute, add the smoked paprika, stir it in and then add white wine, tomatoes, thyme and the chorizo cut in slices. Bring to simmer, stirring occasionally. Now it’s time to add the mussels covering them with the tomato sauce. Put on the lid and cook for 8-1o minutes stirring occasionally until all mussels are opened (discard any that have not opened).

Meanwhile toast some bread and once the mussels are ready, pour them and the souce into a large bowl and serve hot with a side of bread crostini.

How to clean mussels:

Usually you can buy the mussels already rinsed, clean and ready to cook. Just check for any “beards” left and take them off before boiling. If you still have to clean the mussels, rinse and scrub as necessary, then put them into large bowl with plenty of water and soak for 30 minutes. More detailed info on cleaning mussels here.

Sounds easy? It is and really delicious too. Mussels are not only quick to prepare but as well inexpensive, delicious and elegant. I like to pair it with a nice glass of a crisp and dry Sauvignon Blanc. Buon Appetito!
